Bread & Butter Pudding

Bread & Butter Pudding with Strawberry Jam! This one is Guy's all time favourite dessert! The perfect winter dessert and it is so easy.

Prep time: 15 mins | Cook time: 40 mins | Serves: 4-6

 

What you will need:

Jam:

  • 4 Cups strawberries, chopped
  • 2 1/2 Cups of Jam sugar
  • 2 Tbsp of lemon
  • A splash of water
  • 1 Vanilla pod, sliced

Bread & Butter Pudding:

  • 1/2 Cup of sultanas
  • 2 Tbsp brandy
  • 5 Eggs
  • 300ml Pouring cream
  • 300g Milk
  • 1/4 Cup castor sugar
  • The rind of 1 orange
  • A squeeze of vanilla bean paste
  • 1/2 Tsp of Cinnamon
  • 8 Slices of white bread
  • A handful of choc chips
  • 1 Tbsp of Demerara sugar
  • 60g of soft butter

Method

  • Add the strawberries, sugar, lemon juice, splash of water and vanilla pod to a pot and heat on medium until the sugar has dissolved and the strawberries become soft, stirring as you go
  • Once the strawberries have softened, stir consistently until they break down and create the jam 
  • Remove from the heat and allow to cool
  • In a small microwave bowl, add the sultanas and brandy and heat up in the microwave for 30 seconds and set aside
  • In a large bowl, add the eggs, pouring cream, milk, castor sugar, orange rind, cinnamon and vanilla bean paste and whisk until combined. Set aside
  • Coat both sides of the slices of bread with butter and then a layer of jam to one side. Cut the slices of bread into triangles and then fold over into a smaller triangle and set the standing upright in a baking pan lined with baking paper
  • Pour the mixture over the top and then sprinkle over the sultanas and choc chips
  • Sprinkle over the Demerara sugar and pop it into the oven at 180 °C for 30 mins
  • Serve in a bowl with some ice cream, of course, and enjoy!
