Baked Zucchini Feta pie. I know what you’re thinking, there are a fair few ingredients…but wow it is worth it. I added a yoghurt dip on top and I will definitely be making this again x

Prep: 15 mins | Cook time: 55 mins | Serves: 4-6
What you will need:
- 150ml Milk
- 270ml Natural Greek yoghurt
- 4 Eggs
- 1 Block of crumbled feta
- A handful of mozzarella
- 1/2 Cup bacon, diced
- 1/3 Cup leek, sliced
- A handful of spring onions, diced
- 1 Zucchini, grated
- 2 Cloves garlic, minced
- A handful of dill, chopped finely
- 1/2 Packet of filo pastry
- EVOO spray
- Sesame seeds
Method
- Start by preheating your oven to 180°C, spray a deep baking dish with EVOO and set aside
- In a large mixing bowl, add the milk, yoghurt, eggs and whisk to combine
- Add in the feta, mozzarella, bacon, leek, spring onions, zucchini, garlic and dill. Stir through to combine
- Cut the filo pastry into long strips and seperate with your fingers. Add the pastry strips into the mixing bowl and stir through to combine
- Transfer the mixture into your baking dish and sprinkle some sesame seeds over the top
- Place the dish into the oven for 55mins
- Serve and enjoy!
