I have definitely not reinvented the wheel here but why haven’t I made these spinach and feta scrolls before? Perfect snack. YUM 🤤

Prep: 15 mins | Cook time: 25-30 mins | Serves: 4
What you will need:
- 1 Cup frozen spinach
- 1/2 Onion, chopped finely
- 2 Garlic cloves, chopped finely
- 1 Tbsp EVOO
- 1 Block of feta, crumbled
- A handful of shredded mozzarella
- Salt
- Pepper
- 1 Sheet puff pastry
- 1 Egg, whisked
- Sesame seeds
Method
- Preheat your oven to 180°C, line a baking tray with baking paper and set aside
- In a pan, heat up the EVOO and fry up the onion and garlic. Set aside
- In a bowl, add the frozen spinach, onion, garlic, feta, and mozzarella with a sprinkle of salt and pepper. Stir to combine
- Lay out the puff pastry sheet on top of some baking paper (this will help you with rolling it up), and spread the mixture over the top. Roll up the pastry, and cut the roll into slices. Brush over the slices with an egg wash and sprinkle some sesame seeds over the top
- Pop them into the oven for 25-30mins until golden
- Serve and enjoy!
