Baked Chicken Meatballs

Baked chicken meatballs 🍝 A really quick dinner recipe that the entire family devoured. I served this on top of pasta for the kids. Yum x

Prep: 10 mins | Cook time: 25 mins | Serves: 4

 

What you will need:

  • 500g Chicken mince
  • A handful of parsley, chopped
  • A handful of spinach, chopped
  • 1/4 Cup of parmesan cheese + extra for the sauce
  • 1/4 Cup breadcrumbs 
  • 1 Egg
  • 1/2 Tsp garlic powder
  • 1/2 Tsp onion powder
  • 1 Tsp Oregano
  • A sprinkling of salt
  • 1 Bottle of tomato sauce of your choice

 

Method

  • Start by preheating your oven to 180°C
  • Add all the ingredients (minus the tomato sauce) in to a bowl and mix until combined
  • Roll the mixture into small meatballs and fry them up in a cast iron pot for 2 minutes on each side
  • Pour the jar of tomato sauce over the top with a sprinkling of parmesan cheese
  • Place the pot into the oven with the lid on and allow to cook for 20 minutes 
  • Serve and enjoy!
