Lychee Lemon Martini


This is the next best thing to a holiday right now! The tiniest bit more of an effort, but this will set you up for an entire night of drinks by the pool in Fiji 🏖 Enjoy x

What you will need:

  • 60ml Vodka
  • 2 Tbsp Cointreau
  • 1/4 Cup sugar
  • 1/4 Cup water
  • Juice of 1 lemon
  • Rind of 1 lemon
  • 1 Can lychees in syrup, reserve 4x lychees to garnish
  • A handful of ice 


To garnish:

  • 4 Lychees on skewers and popped into the freezer until ready to serve



  • Add the sugar and water into a pot and warm on low heat until the sugar dissolves. Transfer into a blender/food processor together with the can of lychees in syrup, the lemon juice and lemon rind and blitz until smooth
  • Pour through a strainer into another cup and pop it into the fridge to cool down
  • Add the vodka, cointreau, 2x 1/4 Cups of the lychee concoction and the ice to a cocktail shaker and give it a good shake
  • Pour into your desired glasses, add the lychees on skewers to garnish
  • Serve and enjoy!
