This is the next best thing to a holiday right now! The tiniest bit more of an effort, but this will set you up for an entire night of drinks by the pool in Fiji 🏖 Enjoy x
What you will need:
- 60ml Vodka
- 2 Tbsp Cointreau
- 1/4 Cup sugar
- 1/4 Cup water
- Juice of 1 lemon
- Rind of 1 lemon
- 1 Can lychees in syrup, reserve 4x lychees to garnish
- A handful of ice
To garnish:
- 4 Lychees on skewers and popped into the freezer until ready to serve
Method
- Add the sugar and water into a pot and warm on low heat until the sugar dissolves. Transfer into a blender/food processor together with the can of lychees in syrup, the lemon juice and lemon rind and blitz until smooth
- Pour through a strainer into another cup and pop it into the fridge to cool down
- Add the vodka, cointreau, 2x 1/4 Cups of the lychee concoction and the ice to a cocktail shaker and give it a good shake
- Pour into your desired glasses, add the lychees on skewers to garnish
- Serve and enjoy!
