Prawn Pappardelle

This is such an easy ‘fancy’ dinner! I made this again and fried off a couple of anchovies with the garlic and onion. Trust me I’m not an anchovies person but the subtle salty kick is a winner. Kids didn’t even notice! You will love this one x

Prep: 5 mins | Cook time: 15 mins  | Serves: 4

 

What you will need:

  • 500g Green prawns, peeled and deveined
  • 1 Tomato, roughly chopped
  • 2 Garlic cloves, crushed
  • 1 Brown onion, sliced finely
  • A handful of parsely
  • 300ml Cream
  • A handful of spring onions, chopped 
  • 1 Tbsp of truffle oil or EVOO
  • 1 Packet of Barilla Pappardelle all'uovo 
  • Salt and Pepper
  • Grated parmesan

 

       

       Method

      • Start by cooking the pasta as per packet instructions, drain and set aside
      • In a frying pan, sauté the onion and garlic in the truffle oil. Once browned, add the tomatoes, parsley and prawns. Season with salt and pepper
      • Once the prawns are no longer translucent and have turned orange, 1-2 minutes on each side, add in the cream and a handful of parmesan. Stir until parmesan has dissolved
      • Transfer the cooked pasta into the pan with the cream sauce and stir through until combined
      • Plate your pasta with a sprinkle of spring onions and parmesan on top and salt and pepper to taste
      • Serve and enjoy!
