Marinated Peppers with Prosciutto

The whipped ricotta is like eating a cloud and my bet is this would be even better served with some crusty bread 🥖

Prep: 10 mins | Serves: 4

 

What you will need:

  • 500g Marinated peppers
  • A handful of basil, roughly chopped
  • A handful of chives, chopped
  • 1 Packet of prosciutto
  • 3 Tbsp pesto
  • 1 Tub of smooth ricotta
  • 2 Tbsp EVOO
  • Salt & Pepper
  • A squeeze of lemon

 

       

       Method

      • Start by adding the tub of smooth ricotta, EVOO, salt and pepper and the lemon juice to a food processor and blitz until smooth and creamy. Set aside
      • Add the marinated peppers to a bowl and sprinkle over the basil, chives and pesto and mix through
      • Transfer to one side of your serving platter and spoon the whipped ricotta on the other side of the plate and drizzle over some EVOO
      • Top with the prosciutto, sprinkle some salt and pepper over the top to taste
      • Serve and enjoy!
